Well, I may have missed some schedules, I might not always have been on time, and I’m probably famous for not following her recipes to a T! However, considering all things, I feel great about this blog! I have enjoyed it. I love all your nice comments, and for those that weren’t so nice, thanks for reading anyway! Several have asked what is next for this blog? Well, I’m going to take a little break, at least until I get my own kitchen back. Hopefully we’ll move down south in a few weeks and I’ll post some more recipes. They won’t always be Rachael Ray, but I would love to share some other recipes that I love with you. I’ll admit this wasn’t easy to keep going, with a few trips, and especially with the husband pretty much gone for the last 4 months. But I’m glad I stuck with it! Hopefully we’ll set this up to re-post some recipes for those that started following toward the end can see what I did in the beginning! Our biggest news that I have not shared on this blog yet is we are expecting a little girl in May! Which made making menus and picking food pretty hard these past 20 weeks! So I hope everyone has a great new year! We’ll see you back soon, until then, Happy Cooking!

Well, here is my last Rachael Ray recipe of the year. I choose this one because the husband likes cheddar soup. This was a great lunch for us! I think that this Cream of Cheddar Soup may be the best cheddar soup I have made of Rachael Rays. I’ve tried at least one other recipe this year, and this one takes the prize. I wasn’t able to use all the spices because even though my mom has a huge spice container, there was no coriander or cumin, which are in my storage currently. It was all still very tasty! I hope you try this one out, it’s a great salad too, with a real lite dressing!

Cream of Cheddar Soup and Chicken and Lime Salad

Total Time: 30 minutes
Husband Says: “The soup is really good, I like it.”
Notes: We didn’t get to use all the avocado, it wasn’t very good. I also used chicken tenders instead of breast. What I thought was a bad of chicken breast, was tenders. But it all still works the same!

Cream of Cheddar Soup and Chicken and Lime Salad

Ingredients
-
-
after butter melts add onion, garlic, and red pepper flakes

add flour and cook for 1 minute

add stock and cream
-
-
half cherry tomatoes and chop cilantro
-

saute chicken
-
-
chop lettuce
-
-
turn off burner and add cheese
-
-
stir until melted
-
-
squeeze lime over chicken
-
-
toss lettuce, tomatoes, and cilantro with EVOO and lime juice
