Rachael Ray : Cognac Sauced Pepper Steaks

I like most of Rachael Ray’s steak recipes, we’re having a lot of beef this week. I really enjoy the flavor or liquors in the marinade, I don’t drink these, but using them in sauces and marinades just make everything taste better. This recipe calls for the fire thing, which I haven’t attempted, I thought this would do it on its own, but it didn’t. I’m too scared to do that, what if I catch on fire, the baby can’t call 9-1-1. None the less, these steaks were great, I couldn’t get the baby to try it,  but he was satisfied with french fries and deli ham.

Notes: I didn’t do anything different, I used chicken stock, oh and my heavy cream wasn’t good, so I just used some whole milk instead. I think it took the sauce a little longer to thicken up, but it was about the consistency of gravy. I enjoyed every bite!

Rachael Ray: Sliced Steak Sensation

Here is a Rachael Ray recipe that doesn’t call for 100 ingredients! This sliced steak is excellent. It is full of flavor and it is ready in about 15 minutes! This meal let me have some sides that we like at our house. I grilled up some squash on my grill pan and made a little broccoli and cheese, which are 2 of our favorites at our house. So serve this steak up with your family’s favorite sides!

Notes: All this recipe is, is mixing hot sauce, EVOO, white wine vinegar, and worcestershire sauce together and rubbing it over a London Broil or Top Round Steak. I didn’t measure out any of these, just about a teaspoon of each. I put mine in the oven on the rack 2 from the top instead of the top for about 6 minutes on both sides. Sometimes I get scared putting stuff on the top, especially with oil. It can splatter, at least in my oven, when you open the door, so I thought 2nd from the top would be fine. Be sure you let the steak rest for at least 5 minutes before cutting it.
