Rachael Ray: Sausage Patties and Three Berry Compote
Sunday, June 21st, 2009Here is a Rachael Ray sweet treat just in time for Father’s Day! This breakfast is almost as good as the Almond Encrusted French Toast! It is pretty sweet, so you might want to reduce the amount of sugar in your berry compote. You can serve the berry compote with french toast or pancakes. I made some homemade buttermilk pancakes, I may not buy pancake mix again! Whatever you choose to serve it with I think you’ll like it. The sausage patties are so good, I’ve had maple sausage before, but not like this! So this is a good hearty breakfast for dad!

Husband Says: “Sauce was sweet, the sausage was pretty good. I’d drain the grease a little more.” (I should’ve taken these out and put them on a paper towel, but we’re trying to get out of town to a wedding, and I just can’t take care of everything!)
Notes: For the sausage patties I used ground plain pork, salt and pepper, and syrup (not maple because I’m too cheap to buy it, and you’re supposed to put some fennel seeds in here as well, also too cheap to buy them!) Basically combine a couple of shakes salt and pepper and a 2 squeezes of maple syrup with 2/3 lb. ground pork, form into patties and cook in EVOO in a hot skillet until done. For the sweet berry compote, there were no raspberries in site, so mine was a 2 berry compote, strawberries and blackberries, it was so delicious and sweet. I didn’t add the syrup with that, I just served it juice and all over my pancakes! It was to die for!
