Rachael Ray: Mac n Jack Salad

Monday, December 28th, 2009

This Rachael Ray recipe for pasta salad is one I don’t think I’ve ever seen before. I like a lot of pasta salads, so I thought this one was worth a try. This salad just burst with flavors, I only wish I had a mint to get rid of the red onion taste in my mouth. But I really enjoyed every bite. I would say this would probably be better suited for warmer weather, perfect for a nice spring or summer picnic along side some chicken!

Total Time: 20 minutes

Notes: I left out the celery on this, not because I didn’t have it, but purely because I do not like raw celery. I also made this the night before, which I think is perfect because all the flavors can come together better.

Rachael Ray: Peanut Butter and Jelly Moose

Saturday, December 26th, 2009

This Rachael Ray dessert was good and rich. It also involves no baking, but would be a good ending to a nice meal. I’m sure it is very kid friendly as well. What kid doesn’t love PB&J? I’m not going to say this is the last dessert of the year because I haven’t made next week’s grocery list, but it would be a good one to end on!

Notes: There really isn’t much I did differently, except I served this up in a random martini glass I found.
