Rachael Ray: Fajita Nachos
Tuesday, November 17th, 2009When I looked back through Rachael Ray magazines I saw these Nachos in the March 09 issue, they jut looked so good, I had to try them. They held up to the picture in the magazine, they were delicious! I loved every bite and I wanted more. These are great because you can adjust your amounts to easily cook for 1-2 people. The little guy likes nachos, with cheese only for him. The seasoning was really great in these. I used to always make nachos in the microwave, but aren’t they so much better in the oven?

Notes:I did not use beer in mine, I don’t like it, I don’t drink it, and since I was making such a small amount I didn’t feel the need for a few drops. So I did leave that out. Other then that, I topped them off with a dollup of sour cream, that finished them off nicely! I have no idea what is happening to my ingredients picture, they aren’t recording for some strange reason.
- Fajita Nachos
- brown the ground beef, add onion and pepper
- add seasonings
- top chips with meat mixture
- add jalapenos
- add cheese and cook under broiler
- top with tomatoes and parsley
