Rachael Ray: Pasta with Citrus Cream Sauce

Rachael Ray welcomes Spring with this light pasta sauce. I love this pasta, because it packs in a lot of flavor and my son isn’t a huge mess after he eats it! No tomatoes needed! I really think you’ll enjoy this citrus cream sauce, it would be perfect for dinner served by itself or along some nice grilled chicken.  This is just lovely!

Notes: In the ingredients picture you’ll see lemon juice, I didn’t use this, and the 1 lemon I had was bad, so I substituted with some lime zest! I love lime, so it was perfect for me. I also did not use the sherry in this one. I don’t have it, and didn’t want to purchase it!

Valentine Pasta Recipe

This Rachael Ray recipe is called, “You won’t be single for long vodka cream pasta”, its a long name, but cook it for someone and let me know if it works. This sauce is so easy and so delicious. I was thinking as I was cooking it how it’s like a marinara sauce, but it taste so different. Also my store finally got basil in, I love the smell of fresh basil, it was wonderful! Hope you enjoy it and Happy Valentine’s Day!

Husband Says: “I couldn’t taste a difference, I mean it was pasta, bread, (and he got) a salad.”

Notes: I did not use 1 cup of vodka, only the smallest bottle they offer in the store, as you can see below. I still think that little splash gives it a different flavor then if you didn’t use it, I’m sure it would still be good without it, just add the stock in instead, or maybe even some white wine vinegar. I served this up with some yummy garlic bread sticks (the frozen kind).
