Two of my favorite foods combined in this Rachael Ray recipe, Mexican and Pizza! This meal is so yummy, I love it. It is easy to make and you can change it up and make it your own. It almost reminds me a little of chili with corn bread. Just in the last few years I’ve started to like cornbread, I used to not stand it. I don’t like dry cornbread, but moist cornbread is good stuff. This cornbread is nice and moist.

Notes: I only used 1 box of cornbread, I’ve made this in the past and 2 boxes was 1 to many. I didn’t use canned chilies or jalapenos, other then that I followed the directions. We topped ours with some sour cream and avocado.
