Stir-fry

I didn’t eat a lot of stir fry until my husband and I were married, he loves Chinese food, and I have grown to like a few things, but you’ll never catch me trying octopus at a buffet like he did. I do love stir fry! I think that it is healthy, easy, and very tasty. I’ve never made a Rachael Ray stir fry recipe, and I’ll say I had to make some changes so see the notes below for what I changed up!

Difficulty: easy

Husband Says: “The bamboo shoots didn’t go down good, like you’re chewing on sugar cane, but not sweet- like Randy from American Idol says: It was just okay for me.” *he ate this hours after I made it…he’s a basketball coach, it’s basketball season and he eats late.

Notes: Well first off, I couldn’t find bok choy at the store, I think it may be some kind of green lettuce like food, so I substitued broccoli, which is one of my favorite foods. Also I didn’t have beef stock for some reason, so I didn’t use it and I just added the soy sauce to the pan with the steak and veggies. I added a little teriyaki sauce as well, doing it all in one skillet + one pot for rice makes this a breeze to clean up. I’m all about a easy clean up. Well if you find bok choy, let me know how it taste! Enjoy!

Colorful Beef Mac

Well as you may have notice, several of our recipes last week, as well as this week are from Rachael Ray’s Yum-o Family Friendly cookbook, can’t you tell. My little boy has been loving these, he may only be a little over 10 months old, but it’s amazing how much he can eat with his 2 little teeth, we love watching him eat because he goes ”MMMMMM”. Tonight I was feeding him this, just the noodles, they had been in the sauce, and when it was gone, I had to fill the bowl back up because he cried, not a little whimper, more like a screaming I can’t believe it is gone. All of this to say, you’re kids are going to love this one

Total Time: 35 minutes, it took forever for my water to boil…

Difficulty: easy

Husband Says: “it’s good, nothing profound, that’s all I got.”

Notes:I’d say with all the veggies, it’s healthy for you. To make it more figure friendly you could swap the beef for chicken or turkey. To go all vegetarian, I’d add some squash, and it would be great! It is a lot like spaghetti with meat sauce, with some more veggies and a different pasta, I added a little Parmesan cheese, because we like it, and it makes it look pretty! I also didn’t use 2 cups of beef stock, my skillet wasn’t big enough.
