Rachael Ray: Cobb Salad Sandwiches
Sunday, April 26th, 2009We love Cobb Salads at our house, all the different toppings that can go on them, so delicious. When I saw this Rachael Ray recipe I knew it would be a hit. There is nothing more refreshing to me then a salad on a hot day, and since the weather has been so hot, it was refreshing today. I did change up a few things and the recipe linked isn’t exactly like the one in the book, but it’s close enough. See the notes below for the changes!

Notes: The linked recipe is a triple decker sandwich, which I’m sure would be fantastic, and you use whole wheat bread. For our sandwich today we used English Muffins. Also, I did not use Ranch Dressing, while I like Ranch, the husband can’t stand it, so I used a little balsamic vinegar, which in the long run is less fat, so it’s better for you! The last thing I did differently is I cooked the bacon in the microwave, that just makes my life so much easier. We were talking about what all is in a cobb salad, and the one thing I might add to this sandwich is some chopped hard boiled egg.
