Rachael Ray: Cobb Club
Thursday, October 22nd, 2009I haven’t made too many Rachael Ray sandwich recipes, however you may start to see more. I love Cobb Salad (hold the egg). I thought this was an interesting take on it. Grilled chicken sandwiches are some of my favorite meals, so this is a win win for me. The little one didn’t eat this one, because he’s still on a ham and cheddar cheese only kick. Hopefully I’ll break him of that soon.

Notes:Well, since I’ve already talked about not being able to find blue cheese, again I didn’t use it here. So I also left off the sour cream. I just didn’t feel like I needed plain sour cream on my sandwich. I thought about substituting some honey mustard or ranch dressing because that is what I like on my cobb salad. But I guess I’m lazy and just didn’t do either.

- mash avocado
- slice tomato, onion, and lettuce
- grill chicken
- spread mashed avocado on toast
- add hot sauce to chicken
- top toast with chicken
- add lettuce
- add bacon
- add red onion
- add tomato
- top with toast
