Chicken and Roasted Corn Recipe

I was surprised when I saw mayo in this Rachael Recipe. She tends to not like mayo, but for this one, it doesn’t taste like mayo. I bet you’ll love this sauce in this one, my husband raved about it. There was some disappointment when I told him this recipe actually is for Tilapia and Roasted Corn, which I’m sure if you like Tilapia it would be great, again I just can bring myself to eat fish. Looking back I wished I would’ve made myself chicken, and the boys Tilapia. I really want the baby to like fish because it is so good for you. And if you don’t like mayo, you could try to substitute a plain yogurt, it would probably be just as good, you might want to add 1 teaspoon of mayo to it, just for the flavor!

Husband Says: “What kind of sauce is this? (me- Mayo and Chili Powder) It is so good, is there more? (me-no) Why didn’t you make more of this, I can’t believe there isn’t more, I’m still hungry.”

Notes:A word to the wise, make extra of this, or you’ll greatly disappoint your husband and he won’t believe there isn’t another piece of chicken left. Like I said the only thing I did different in this on is substitute chicken  for the tilapia. This Rachael Ray recipe was extra easy and all you have to do it throw it in the oven. I love meals where you don’t use to many pots, because ultimately I hate doing dishes! Enjoy! And if you use tilapia let me know if it was good! I did serve this with mashed cauliflower, I had it left over from the soup a few days ago, and I think everyone liked it. So try it instead of mashed potatoes!

Chicken Roll Recipe

This Rachael Ray chicken recipe I really enjoyed. It was so easy and I changed it up a little bit, but it was a nice little Mexican fix. I love Mexican food and Rachael Ray doesn’t have a ton of Mexican recipes, maybe she should work on that. I know she’s Italian and all, but we went to Italy for 2 weeks, and that was enough pasta for me for about a year, but don’t worry, I still love my pasta!

Husband Says: “I was glad to eat something else besides soup.” (Enlightening I know)

Notes: As you’ll see in the pictures I added green chilies, I love those and I think it tasted so good. Also I didn’t fry these, i cooked everything in the skillet, then rolled them up, and cooked them at 450 degrees in the oven. So they were crispy, but not fried! However, I had a lot of problems with the corn tortillas cracking as I rolled them. I had to microwave them for about 2 minutes, which is probably why they tell you to heat them in the skillet. In the end it worked out, and they were lovely. If it weren’t so icy, I would’ve went out and bought some avocados for some guacamole, that would’ve made this even better!
