This last recipe for the week out of Rachael Ray’s Open House cookbook is very kid friendly. If your kids are older she gives suggestions on things that they can do to help. I highly recommend having your kids help you, helping them realize what all goes into cooking with eventually make a good impact on them. This was a very simple recipe, I ate it with some oven fries, but it would be great with just about any veggie.
Recipe: Chicken Stick-ens

Chicken Stick-ens

Cookbook: Rachael Ray’s Open House

Total Time: 35 minutes

Husband Says: “It wasn’t bad, maybe could’ve used some more sauce, or the honey, could’ve been a little sweeter.”

Notes: I thought about grilling these because it was nice, but my grill wouldn’t turn on. All my skillets were dirty so I stuck these in the oven for 20 minutes at 450. They turned out great. Since I do have a child under 1, I made this sans the honey, which I think would’ve added a lot of great flavor, so if you make it with honey let me know what you think! Also I used metal skewers over wood ones, you don’t have to keep buying those!

I really wanted to love Rachael Ray’s Tuscan Chipecken recipe, but maybe my sauce was to thick, or maybe the rosemary was to strong. I’m not saying it was bad, but definitely wouldn’t make my top 10 Rachael Ray dinners, sorry Rach! I do find it interesting, chicken, I don’t recall there being a lot of chicken in Italy, maybe I just missed it. Well, if you make this let me know what you and your family thought. The baby like it, but again, he eats anything! The recipe on her website is a little bit different then the one in the book, so if the ingredients weren’t in your shopping list, just leave them out!

Recipe: Tuscan Chicken

Tuscan Chicken

Cookbook: Rachael Ray’s Open House

Total Time: 28 minutes

Husband Says: “It’s good, but it’s not my favorite, it’s okay.”

Notes: If you don’t want to use wine in your cooking, don’t, I like to use it because the flavors are usually so good. I’m not sure I would’ve missed it in this dish, and don’t worry about your little ones, the alcohol cooks out, so it is mostly just very intense flavors. Also, maybe tone back the rosemary a little bit, and I would just leave out the sauce, or don’t make it thick like I did. I served this with some white cheddar mac and cheese.

I was surprised when I saw mayo in this Rachael Recipe. She tends to not like mayo, but for this one, it doesn't taste like mayo. I bet you'll love this sauce in this one, my husband raved about it. There was some disappointment when I told him this recipe actually is for Tilapia and Roasted Corn, which I'm sure if you like Tilapia it would be great, again I just can bring myself to eat fish. Looking back I wished I would've made myself chicken, and the boys Tilapia. I really want the baby to like fish because it is so good for you. And if you don't like mayo, you could try to substitute a plain yogurt, it would probably be just as good, you might want to add 1 teaspoon of mayo to it, just for the flavor!

Cookbook: Everyday with Rachael Ray Magazine, 2/2009

Total Time: 25 minutes

Husband Says: “What kind of sauce is this? (me- Mayo and Chili Powder) It is so good, is there more? (me-no) Why didn’t you make more of this, I can’t believe there isn’t more, I’m still hungry.”

Notes:A word to the wise, make extra of this, or you’ll greatly disappoint your husband and he won’t believe there isn’t another piece of chicken left. Like I said the only thing I did different in this on is substitute chicken for the tilapia. This Rachael Ray recipe was extra easy and all you have to do it throw it in the oven. I love meals where you don’t use to many pots, because ultimately I hate doing dishes! Enjoy! And if you use tilapia let me know if it was good! I did serve this with mashed cauliflower, I had it left over from the soup a few days ago, and I think everyone liked it. So try it instead of mashed potatoes!

Husband Says: “I was glad to eat something else besides soup.” (Enlightening I know)

Notes: As you’ll see in the pictures I added green chilies, I love those and I think it tasted so good. Also I didn’t fry these, i cooked everything in the skillet, then rolled them up, and cooked them at 450 degrees in the oven. So they were crispy, but not fried! However, I had a lot of problems with the corn tortillas cracking as I rolled them. I had to microwave them for about 2 minutes, which is probably why they tell you to heat them in the skillet. In the end it worked out, and they were lovely. If it weren’t so icy, I would’ve went out and bought some avocados for some guacamole, that would’ve made this even better!

Cookbook: Everyday with Rachael Ray magazine

Total Time: 30 minutes, much better then yesterday!

Difficulty: easy

Husband says: “Finger-licking good! I didn’t find them that spicy, it was good, I love wings!”

Notes: The only thing that I didn’t use was hot pepper sauce, I probably could’ve used Hot Sauce to make them spicier. I severed these up with some good old Bush’s Baked Beans and corn on the cob.

This Rachael Ray recipe combines cheese, mashed potatoes, and broccoli. I know I’m crazy but broccoli and cheese is my favorite “veggie”, if you don’t like it and you know my grandma, eat hers once and you’ll be hooked too! I think that you’ll really enjoy this dinner, even with the Gouda cheese!

Recipe: Chicken with Gouda Gravy and Smashed Brocco-tatoes

Ready to eat!

Cookbook: YUM-O

Total Time: 45 minutes, my potatoes took forever to boil…

Difficulty: easy (I’m not sure this will ever change)

Husband Says: “Nothing profound, it was good, I don’t have any words of wisdom, I liked it.”

Notes:The only thing that I did a little different on this recipe is I cooked the chicken on my grill pan, mostly because I got it for Christmas and haven’t been able to use it yet! Also instead of boiling broccoli, I steamed it in the microwave with my favorite product, steam in the bag vegetables then mixed them into the potatoes, all covered in cheese, this meal will sure be a kid pleaser! (Or maybe it’s not so good for you so it’ll give you a heart attack…it’s not that bad for you, I’m sure it could be worse.)

This one will clean out your sinuses, so if you've got a stuffy nose I have the answer for you! Rachael Ray's Buffalo Chicken Chili, not for the weak. Still I had to substitute the ground chicken, for chopped chicken, which I took some help from the store and bought a small bag of already cooked and chopped roasted chicken. So again, I'm pleading with anyone that knows where I can get ground chicken the the North OKC area, let me know! Also if you don't like blue cheese, substitute it for mozzarella cheese, I did for my husband, but I love blue cheese so I kept it as is!

Cookbook: Yum-o!

Total Time: 30 minutes

Difficulty: very easy

Husband says:“It could’ve had more meat, a little vegetable heavy. It was okay, spicy, cleared my stuffy nose out!”

Notes: You could crock pot this recipe, it would be amazing after all the flavors sat together all day. In 30 minutes, the flavors will still very intense. It would be thicker with ground chicken over the chopped chicken. Or if you go with the chopped chicken, I’d put in 4 cups, not the 2 cups I used. Also, if you don’t like it really spicy then just don’t add the hot sauce, or add less. I actually didn’t measure the hot sauce, so maybe there was more then a 1/4 cup hot sauce. I loved this chili, or soup, I would totally make it again, and I might even add some peppers in it, I love spicy stuff! Happy cooking!
