Rachael Ray: Farmer’s Bagel Baskets

Everything about this Rachael Ray recipe I loved; with the exception of the eggs of course. It reminded me of a breakfast hash. If you want to eliminate some of these steps you could buy those potatoes with peppers already in them, the frozen ones you know? I made it all from fresh ingredients. The baby loved this, he almost ate the entire thing. I decided if he was going to dip chips in Chili’s salsa and eat them at lunch, he could take the heat. He’s a boy after my own heart! I am also pretty sure I didn’t cut these right, but the bagels were already pre-cut, so you gotta work with what you’ve got!

Total Time: 23 minutes (1 Little Einstein episode, so perfect!)

Notes: I decided to season this up with some steak seasoning, which was fabulous. I also scrambled 1 egg for the baby and put it in his, he likes eggs, because I’ve always made them for him, so he doesn’t know any different. I am a firm believe if I introduce him to all the good foods I don’t like now, there is a better chance of him liking them!  I will say, because I am “semi” watching my diet, I didn’t eat mine in a bagel, just without a bagel so I wouldn’t have the extra carbs, I got plenty at lunch!

Rachael Ray: Oatmeal Cookie Pancakes

A reader asked me last week if I have tried this Rachael Ray recipe, and it happened to be on my menu for this week. Let me tell you, these are delicious! I bet they aren’t horrible for you either, they’ve got some sugar in them, but a little sugar never hurt anyone. I love the banana taste in them as well. I would recommend these for breakfast; I don’t think this works for a breakfast, lunch, or dinner. To be honest, the whole time I was tempted to put in chocolate chips, now that, well it would just be heaven! So try these out, I think you’ll like them.

Notes: I did everything like the recipe says, you have to measure the ingredients out for these. I did use non-fat sour cream and instant oats. If you make these and add chocolate chips let me know how you liked them!
