Rachael Ray: Oatmeal Cookie Pancakes
A reader asked me last week if I have tried this Rachael Ray recipe, and it happened to be on my menu for this week. Let me tell you, these are delicious! I bet they aren’t horrible for you either, they’ve got some sugar in them, but a little sugar never hurt anyone. I love the banana taste in them as well. I would recommend these for breakfast; I don’t think this works for a breakfast, lunch, or dinner. To be honest, the whole time I was tempted to put in chocolate chips, now that, well it would just be heaven! So try these out, I think you’ll like them.

Notes: I did everything like the recipe says, you have to measure the ingredients out for these. I did use non-fat sour cream and instant oats. If you make these and add chocolate chips let me know how you liked them!

- Ingredients
- mix dry ingredients
- whisk wet ingredients
- fold in bananas
- stir in melted butter
- pour on griddle
- flip when they start to bubble
- just look at that beautiful stack of pancakes

Yes, they were YUM-O, as Rachael Ray would say. The baby and my mom ate them the next day for breakfast. She liked them too!
add the chocolate chips, you won’t be sorry. I have made them several times and the kids just can’t get enough. They freeze really well too, just pop them in the toaster to warm back up.
