Rachael Ray: Hearty Minestrone
This is another Italian Soup that I enjoy so i thought I’d try Rachael Ray’s recipe. However, mine is a little less “hearty” minestrone. I like to do my grocery shopping on Fridays, the store is less crowded and I feel l can get in and out easier. After I came home from a horrible experience with the little guy, I was making room in the fridge for the next week’s ingredients. Well, I didn’t pay attention to what I still needed for this recipe and promptly threw out all the herbs, kale, carrots, and celery that I don’t need next week. Since the little one was so awesome at the store, the last thing I wanted to do was run to get a few ingredients. The joys of part time single parenting! But I still enjoyed this soup, without all the ingredients.

Notes: As you know I didn’t use the carrots, kale, celery, and no fresh Rosemary or thyme, but I had dry thyme. Sometimes you gotta work with what you’ve got! Next week I’ll wait to clean out the fridge till I’m done cooking for the week!
- Hearty Minestrone
- Ingredients
- saute onion and garlic in EVOO
- add bacon
- add salt, pepper, and thyme
- add chick peas, white beans, and diced tomatoes
- add water and bring to a boil
- add elbow pasta
- cook until pasta is done
