Rachael Ray: Broccoli, Cheddar, and Ham Bake

When I was planning this week’s menu; I didn’t realize how much this Rachael Ray recipe was like mac and cheese, which I just made last week. However, when you have a 1 year old, can you have too much mac and cheese? I also find it interesting how differently mac and cheese can taste depending on what you add in it. I bet I could do a solid week of different tasting mac and cheese, not that I’m going to, but I bet I could. It is very versatile, and it is pretty cheap to make too. This whole meal, that would easily serve 4 people would cost you under $10 to make. Not per person, the whole thing. So if you’re watching your budget, this may be a good tasting, filling option for you! I think the baby liked it too, except when he was finished eating, he pushed all his food that was left over off his tray, onto the floor, and waved “bye-bye”. I am not kidding about that, I couldn’t help but laugh.

Notes: The only regret I have is not just buying the diced ham you can get in the store. The thinly sliced ham is okay, but I just wasn’t thinking. Remember my store deli is currently closed, so I probably just didn’t think about the diced ham, everything is so mixed up at that store right now, it’s hard to find the basic things I need. I did add some Parmesan cheese on top, just because I wanted to. I also decided last minute not to add the almonds, I tasted one, and something was not right about it. So I left them off.

  1. Wow, Michelle you have inspired me! Your step by step instructions are alot easier to follow than Rachael’s, even though i love her, she talks way too fast for me to keep up! lol!
