Rachael Ray: Super Nachos

I always almost get nachos when we go out to eat, but I don’t get them or make them at home. So when I saw this Rachael Ray recipe I thought, oh Nachos, I bet those will be good! They were great. I didn’t feel like I was eating home-made nachos, but from somewhere else. I changed up a lot in this recipe, so make it Rachael’s way or make it my way, it’s up to you!

Notes: Well I didn’t get black beans, but I got red beans. I don’t know why, just what I had. So I used them. After looking at the recipe, I thought I’ll make this a little healthier so I didn’t make the cheese sauce. I just sprinkled the top with pepper jack cheese and cheddar cheese, then melted it in the oven. I also used the gazpacho that I made instead of chopping up the pico, I mixed it in with the meat and poured it over the chips. I topped these with some sour cream, it was some good eats!
