Rachael Ray: Spinach Salad with warm dijon dressing

You need to make this Rachael Ray salad, tonight, seriously, you’ll be sorry if you don’t. I had an old friend over for dinner, she took one bite of this salad and fell in love. I fell in love as well, it really was very tasty. I enjoyed it so much. The flavor is so different, and refreshing. You could easily serve this salad for lunch or as a side dish. I think it would be perfect with some grilled chicken. However you want to serve it, make it tonight! It is funny to me how much I don’t like cooked spinach, but I would eat a spinach salad over other lettuce any day! You get so many healthy benefits from eating spinach! I did let the baby try it, and he ate 2 pieces of lettuce, so your kids might even like it as well!

Notes: I forgot to buy a shallot at the store, so I used a pearl onion I had. I know they have different flavor but sometimes you gotta use what you’ve got. I also just poured the soy sauce, mustard, and red wine vinegar in the skillet with the onion and EVOO, then streamed more EVOO in. You know me, the less dishes I have to do the happier woman I am!
