Rachael Ray: Gazpacho

I choose this Rachael Ray recipe because I have always wanted to try Gazpacho. Six years ago I lived in NYC for the summer, this cold soup was the thing to eat there. I never could bring myself to try it. So, I thought, it’s 110 degrees in good old Oklahoma I’ll give it a try tonight. I wanted a bag of chips to dip in it. I felt like I was eating salsa. It wasn’t bad, just not what I hoped it would be. You win some, you loose some, and to be completely honest, I didn’t even think about serving it to the husband, he would’ve hated it. So sadly, I can not recommend this one to you, unless you want a pretty tasty salsa!

Total Time: 10 minutes, plus time to chill, so 30 minutes or so

Husband Says: didn’t even serve it to him!

Notes: Maybe it wasn’t smooth enough, I just don’t know. Maybe I just don’t like this. If you have a Gazpacho recipe, send it my way, I’d try it again! My friend did try this, she said it was good, but she wanted chips too! I didn’t have hot sauce, so I didn’t use that, but I don’t think it would’ve made it better.
