Rachael Ray: Cornish Hens

This Rachael Ray recipe is an inexpensive option to a large turkey or chicken. Cornish hens are filled with great flavors and they cook up in half the time. She says to serve 1 per person, but I think you could do half per person if you had enough sides. I made 2 for the 3 of us, the husband eats a lot, and the baby and I can share! So if you want a freshly cooked bird in less time, make a cornish hen!

Recipe: Cornish Hens- slather EVOO, rosemary, thyme, salt and pepper and roast in oven at 500 degrees for 15 minutes and 10 more minutes at 400 degrees

Notes: I didn’t have any rosemary, they didn’t have it at the store, so I used parsley. I also had to roast mine longer then the 15 minutes and 10 minutes Rachael suggest. I cut into 1 after the amount of time and it was still pretty raw. These you want to make sure you cook all the way through, so just put a little water in the pan so they don’t dry out!
