Rachael Ray: Chimichuri Chicken Bites

Well, I had to look up what Rachael Ray meant by “chimichuri”; but all in all it doesn’t matter because this chicken is good! I really loved the little hint of spice, but all of the flavors of it were fresh and different. I love different tasting chicken, I could eat chicken for every meal, but the husband likes some variety, so hopefully this chicken is different enough for him. Try it for lunch or dinner today or use it at your next finger food party!

Notes: I just left the chicken in strips since we were eating it for lunch. I didn’t feel like my sauce was the right consistency to dip this in, so maybe I didn’t pulse it enough. I used dry oregano and thyme, because my store doesn’t have those fresh. Like I said I really enjoyed the flavors, I also just used 1 jalapeno so it wouldn’t be so hot for the baby.

    This really looks great with such depth of flavor. I think I’ve quickly become your biggest fan. How do you do it all?. A business, a husband, a baby. You are truly amazing.

    Your child must have an extremely sophisticated palate to eat these wonderful recipes. How old is the baby?

      I’m so glad you’re enjoying the recipes! My baby is almost 1 1/2, I don’t give him everything, but since he could eat solids he’s always wanted to eat whatever we were eating. So I let him try everything! He is not a picky eater at all, which I think is a good thing!
