Rachael Ray: Ham and Cheese Stuffed Chicken

Here is another 15 minute Rachael Ray meal, that isn’t. Maybe it’s me, but I just can’t cook chicken in 15 minutes. I pounded out the chicken, but I ended up finishing it off in the oven. So enough about it taking longer, I choose this because I love chicken cord on blue, chicken stuffed with ham and cheese. I used to always want this for my birthday and now I have trouble finding it in a store. Not that it matters if they sell it since I cook everyday we couldn’t have it for dinner anyway. I would say this was good, but it didn’t replace store bought for me. Maybe because that is breaded and has more cheese.

Husband Says:“I guess it was okay, I think something was missing. Like maybe it would’ve been better with a barbecue marinade or something. The chicken didn’t have that ‘wow’ factor.”

Notes:Well, I didn’t want to buy Fontina cheese, and the store was out of provolone which is what I planned on using. (Our store was out of a lot of things thanks to the non-existent 6-12 inches of snow we were supposed to get.) I used Monterrey jack cheese, and I should’ve used more then I did. I also did not have any white wine, so I poured a little white wine vinegar in and finished it all off in the oven. Finally, no fresh parsley so I used a little dry. Unlike my husband’s opinion I found the chicken to be flavored perfectly, and juicy. Oh the joys of different taste buds!
