Rachael Ray: Chicken Tortilla Soup

Well Rachael Ray might be able to make this if she made it with shrimp or already cooked chicken in 15 minutes, but I just don’t know how you’d do it starting with raw chicken. In other words, our week of 15 minute meals, did not start out 15 minutes. A little bit more time was needed to cook the chicken, but it was worth the extra time. It snowed here today so this soup was perfect on a cold, snowy, March day! It was very warm and filling. I think you’ll like it too!

Notes:Well I made this with chicken, but like the recipe says you can make it with shrimp if you choose. The only thing I left out was coriander, I don’t have any and I can’t find it at my grocery store. Other then that it was a good simple meal, that was warm! (The recipe linked does not mention anything about shrimp, however the one in the book does suggest it.)
