Cider Beef Recipe

Rachael Ray’s mom came up with this recipe, and it was YUM-O! I found this beef to be so full of flavor and just delicious! I while back I got a bunch of steak from someone who drives around and sells it in bulk, my husband wasn’t too happy about it, but now I think he’d recommend it. It wasn’t very expensive and we’ve eaten a lot of steak off it, and still have a lot left. It’s a great way to stock up, it is frozen and vacuumed sealed so it’ll last you for a while. I personally believe the cuts are better then what you’d get in a regular grocery store, so find a supplier in your area and stock up on beef!

Husband Says: “The steak was good, didn’t really taste any difference, these potatoes, those are great!” (The funny thing about this is I made the steak completely different then normal, and I make my potatoes the same way, every time, I did add cheddar to them, but I’ve done it before, go figure!)

Notes: Well I did a lot of stuff different on this one. I choose to mix 2 packets of apple cider with the beef stock. After I browned the steaks on both sides, in a grill pan, I added baby carrots and sliced onion, then poured the beef stock and apple cider mix on top and threw it in the oven. My cast-iron pot was dirty, luckily my grill pan has some edges. I did not cook this for 45 minutes, my steaks might have been thinner, and they were already cut. I’d suggest this because it will cut down on the cooking time. My husband would’ve like the carrots to be softer, but I don’t mind a little crunch to them. I loved the apple cider mix in this, I thought it added a ton of flavor, but wasn’t overwhelming! Everything else I did the same, except I like to whip our mashed potatoes with a mixer. So after the potatoes are down, drain them, add salt and butter and mix with the mixer until there are no lumps, then add a little milk and sour cream! I bet you’ll love them!

    This looks very tasty. Who wouldn’t love mashed potatoes with cheddar cheese? Seriously good!!
    Have you ever been on the RR show or did she talk about you once? I seem to remember somebody doing this and it was more than likely you. Great job!
