Rachael Ray: Warm Tortellini Salad

This Rachael Ray recipe I thought for sure the little one would eat. He’s always been a fan of cheese tortellini. Since he didn’t eat anything else I was very pleased he had some of this. I really like Tortellini salads; I think I would rather eat Tortellini in a salad over in a marinara sauce or alfredo. It just seems to fit better for me. This is a nice quick cooking recipe when you’re in a hurry, but you want something that taste good and fills you up!

Notes:I don’t think my tomatoes roasted very well. They tasted fine, just didn’t look like the picture in the magazine. I used fresh tortellini, I couldn’t find any frozen types. I also didn’t put in mozzarella, I just like that better melted. I did top it with a little Parmesan. I loved the green beans in this; so good! I also opted to clean more of my fridge out and heat up some cheese texas toast so it wouldn’t go to waste over making my own garlic bread.

    You really lucked out on using fresh tortellini instead of frozen. Fresher pasta usually has a more robust flavour, so it probably added some extra kick to the dish!

    i definitely agree with tortellini being under utilized in pasta salads. it’s just so good.

    but i’d probably stick to cheese or cheese/veggie fillings. no sausage or chicken.
