Rachael Ray: Summer Herb Pasta

I have really enjoyed Rachael Ray’s variety of pasta recipes. I used to be strictly a meat sauce girl, but I’ve been expanding my horizons, and my taste buds are loving it! I highly recommend as Summer comes to a close you try a citrus-y, herb pasta sauce. These are actually even good cold too! If you make one of these pasta recipes, let me know how you like it!

Cookbook: Everyday with Rachael Ray

Total Time: 20 minutes

Notes:I forgot the bacon on this dish, I can’t believe I forgot the bacon. I had it out, in the microwave, ready to cook, and I was so concerned about finding some veggies to grill I completely forgot about it. It was delicisious without it, but it did make me sad. I also didn’t use any cheese on this one, I thought I had some, thought I bought some, but apparently I didn’t do either.

It’s not RR’s recipe if you leave out her ingredients. Sorry but you leave out too many important ingredients in all of her recipes. I agree she uses to much cheese but this is sad without the cheese and bacon. Better luck next time.

Hi Sam, Thanks for your comment and sharing you feelings about that. As I said in my post, the bacon was all ready to go, but I forgot it. I would never claim to be perfect, and I do forget things, and choose not to use things. However, ifI feel on 30 minute meals, Rachael Ray encourages people to make her recipes using ingredients they may like more. The herb sauce was very much her recipe. Right now in my life I have a lot going on, and I can’t run to the store to grab things when I play a single parent during the week. So sometimes you have to make what you have work!

I applaud you for cooking every day! And being a creative cook means you get to do what you want… Even if it is updating or refreshing or improvising. Keep it up!

I like to cook and post about it in this blog. In 2009, I cooked a Rachael Ray recipe everyday for my family. You can check out the featured receipe from 2009. Here's hoping this blog makes your lives a little less work and more enjoyable!
