Rachael Ray: Strawberry Pancakes

Today we’re having Rachael Ray breakfast. She has a lot of recipes with strawberries in them, and since strawberries are so available right now, it’s great to take advantage of all the different ways to eat them. I’m lucky that strawberries are my husband’s favorite fruit, so hopefully he’ll appreciate these strawberry pancakes.  I like to eat my pancakes with a little butter and sugar, but my husband drowns them in syrup. So I’m sure I will be more critical of the taste then he will, I honestly don’t know how he taste anything else but syrup! So enjoy these whichever way you like your pancakes!

Husband Says: “They were okay, the strawberries and good, but the pancakes were dry.”

Notes:I have never actually made complete pancakes from scratch. I was so tempted to fold strawberries into my favorite pancake mix. However, I thought, I’ll go out on a limb and make them from scratch. Well, in retrospect, I wish I just added them to my favorite pancake mix (hungry jack complete buttermilk). The pancakes were okay, a little dry I thought. The mix was very thick so it was so hard to make them circles. Maybe the “sliced strawberries” should’ve been chopped. I think that might have helped.
