Rachael Ray: Spicy Honey Grilled Chicken

I choose this Rachael Ray recipe for the grilled pineapple. Apparently we’re having an ant problem, and I went to cut it, it was bad inside, and all these ants were outside of it, so horrible. So I made a couple other sides to go with this chicken. I guess we’ll have to save the grilled pineapple for another day. On a side note, Braum’s does not sell pineapple, so if you go there to get it, you may come home with 3 flavors of ice cream, I had a coupon, so I needed to buy something!  Other then the pineapple problems, the chicken was excellent, I loved it!

Notes:I made the chicken pretty much like the recipe says to, except I didn’t put EVOO on the chicken, just some salt and pepper as it cooked on the grill. So are you wondering what I made in place of the pineapple? I made a green  bean casserole, just with green beans, cream of chicken soup, and fried onions on top. You can mix this up in the bowl you throw it in the oven to heat it in! I also had some frozen corn, so I steamed it in the microwave, poured it in a bowl, added salt, pepper, butter, and a little bit of cream cheese. It was a nice slightly creamy corn, oh and some chili powder for a little spice. I think everyone loved everything, the baby even ate the green beans, he won’t eat them plain!

    I have this recipe and liked it too. As for the fresh pineapple which isn’t alaways readily available; I used canned rings and grill them and they are yummy everytime!
