Rachael Ray: Southwestern Burrito Bar

This Rachael Ray recipe was included in the Sunday night party. This is my kind of recipe, no mess, no fuss, nothing fancy, just throw it all together and it taste amazing. If I were serving this at a party I would go all out, chip, queso, sour cream, guacamole, tomatoes, onions, if you think it should be on a burrito bar, it would be at my house. However, for myself and the baby, we kept it simple for obvious reasons. I was kicking myself when I didn’t grab some of my mom’s friend’s fresh tomatoes for this one, I forgot I could’ve used them. Those are amazing! So be creative and make your own burrito bar tonight!

Notes:I never add much to my meat for tacos, no taco seasoning at our house, I’m not a big fan. For this I did add a little cumin, and the salsa combined with everything was perfect. I thought I’d make a little rice and put in my burrito as well. Plus the baby loves rice! I made the baby a cheese quesadilla, so I decided while the panini maker was out, I’d grill up my burrito too. Oh, so good! I just love grilled burritos, I think I could eat this every day!
