Rachael Ray: Smoked Turkey and Chipotle Wraps
This is another home run for Rachael Ray recipes; I loved this one! When wraps first came out I really liked them, at the deli I used to work out we made this amazing ginger grilled chicken wrap with avocado, oh it was amazing, well this one I think is actually better. I wanted to buy Spinach or Sun Dried Tomato wraps instead of tortillas, but when it came down to it, I couldn’t spend the $5 bucks or so on 6 wraps and I had tortillas, it was still good. This is a great recipe because there is little cooking actually involved. You could make this for your kids lunch, if they like spicy things, because it does have a kick to it, and that’s what makes it so good!

Notes: I didn’t have any mint, so I did not use that. Also at the store the red peppers were not good, so I substituted some tomato to get some red. I know it wasn’t the same as the pepper, but it worked. It’s cold here since we’re expecting some snow, so I grilled these wraps in my panini maker instead of toasting the tortilla, they were so good. If you’re wondering the baby had a turkey, swiss, and avocado quesadilla instead of this wrap. He’s not great at eating lettuce and the chipotle is hot, so there’s your warning. It might be hot, but its so good!
