Rachael Ray: Quesadilla Casserole

This was in last month’s Rachael Ray magazine, and I thought it looked good. I’m always up for a new Mexican flavored dish so I was happy to try this one out. I had never used green enchilada sauce because, but it is very similar to salsa verde. I added something to it, which I think was a nice addition so check out the notes below!

Notes: Since the husband is home for Fall Break (yeah!) I added chicken. He’s not a huge fan of vegetarian meals, so you gotta make him happy! I also sadly had to throw away my onions this week, they were horrible. They were really stinking up my kitchen. I also didn’t saute the beans, but just put them in a bowl and mashed them. My casserole only had 3 layers, I didn’t have a deep enough pan for this one!
