Rachael Ray: Not your Mamas Nachos
This Rachael Ray recipe is different. If you haven’t seen it before; you’re going to wonder what was I thinking? As I was making this one I thought, “What was I thinking?” Broccoli with nachos, those things really don’t go together. However, I love broccoli, I love it with cheese, on my potatoes, plain, doesn’t matter. Why not give it a shot. The surprising thing was, or maybe not so surprising, it was delicious! So while you might think you’re crazy, and other people really might think you’re crazy, don’t knock it until you try it! You just might like it!

Notes:I didn’t serve mine up with Greek yogurt, just the green salsa. I also used store bought chips over making my own with tortillas.

- saute onion and garlic
- add water and broccoli
- heat beans through
- pour over chips
- cover with cheese and bake until melted
