Rachael Ray: Inside Out English Muffin Grilled Cheese
Sorry to disappoint some readers with another Rachael Ray sandwich “recipe”. The question has been asked do I consider these recipes? Well, they are published in her magazine, so I guess they are her ”recipes”. Do I need recipes to make sandwiches, no I don’t. However, I typically don’t make a sour dough sandwich, or use English muffins for grilled cheese. So I feel like it does give a different take on sandwiches. If you were cooking 6 days a week for yourself and a 20 month old, what would you make? I’m open to suggestions. Remember, the husband is only home 1 night a week for dinner since we are still trying to get moved. When I started this blog, I never in a million years would have guessed I’d be living away from my husband for 3 or more months, I will admit, it was much more fun when he was around to eat. But living apart means 2 grocery bills, so I’m doing the best I can to continue this blog everyday with food that I won’t be stuck with a ton of leftovers, and won’t make my grocery bill over $100 a week for myself and the 20 month old. So leave your suggestions and I’ll look into them.

Notes: I used yellow sharp cheddar cheese, I couldn’t find any white cheddar cheese on the cheese aisle at the grocery store. Which is crazy, cause they have more cheese then the other grocery store I was going to, go figure.

- butter inside of muffins
- add tomato
- add cheese and top, heat until melted

I love your blog! And I’ve used Rachael Ray’s sandwich recipes – I just saw this recipe in the magazine and thought how clever to use the English Muffin inside out I would have never thought to do that so you just keep up the good work!!
I think its awesome that you have kept up with this blog EVERY DAY! I remember what it was like having my dad living away for a year before we got moved and I can’t imagine having to cook everyday too, keep up the good work!
