Rachael Ray: Fajita Chicken Salad
This is a great, fresh Rachael Ray recipe. I enjoyed this salad. I had to add more salt to the dressing then I would’ve like to, it was a little bland for me. I bet some avocado would’ve been great in the dressing. I may have to try that some time. I think you could add some other things to this one, red peppers, cheese, corn, cut up tortilla crisp. As for a simple salad, it was surprisingly satisfying and a good pre-packing meal!

Notes: I followed the directions, but I skipped out on the baked tortillas, although I’m sure they would’ve been good, I’m operating on minimal supplies this week while we pack up and store all of our stuff!

- grill onion and pepper
- puree buttermilk, pepper, lime juice, and EVOO
- grilled chicken seasoned with salt, pepper, and lime juice
- mix romaine with dressing, onion, and pepper

This looks like the perfect “pre-packing meal.” Great flavor, not too filling, minimal trouble to prepare. You don’t even really need the tortillas! This is an interesting dish beacuse, as you said, it can be taken in so many different directions. Any direction you are moving, this dish is ready for the journey. I almost wish I were moving so I would have a good excuse to make this Rachael Ray salad!
Good luck packing, Michelle. Keep up that Sooner spirit! But I hope you aren’t moving via covered wagon like the original Sooners!
