Rachael Ray: Double Decker Chipotle Chicken Clubs

This Rachael Ray recipe was perfect for this week since it called for 1/2 a chicken. So 1/2 was for the soup and 1/2 for this club. After I ate this chicken club, all I could think about was how I wanted more of it. It was so good. I think to make this for more then 2 people you would need more then 1/2 a chicken, or maybe just shred it up better. A good friend joined us for dinner, she loved the club too! It was a very successful dinner!

Total Time: 10 minutes

Notes: I used microwave bacon, easier clean up, and yes it’s not as thick, but then your house doesn’t smell like bacon for days! I only had 2 pieces left, so I wish I would’ve had more bacon. 2 more pieces for 2 would have been nice. I also couldn’t find watercress, so I just used some baby spinach. Lastly, I didn’t use as much mayo as this recipe called for. I just a few teaspoons in the chicken salad, but I did not spread it on the bread as well. I used to like mayo, but since trying to watch my weight I quit using it so much, so I just could pass on it all together now. If I had some plain yogurt, I would’ve used that!

    Did you read about this blog where a woman is doing the same thing you are? She’s going to be on Rachael’s talk show tomorrow. She’s getting married, wanted to learn to cook, and has only been doing it since August. How come she gets on the show and you don’t? You’ve been cooking Rachael’s recipes daily for months!
