Rachael Ray: Curried Chicken and Cider Soup

This Rachael Ray recipe just screams out “It’s Fall!” The apple cider smelled just filled my house, it was so wonderful! I do wish it was a little thicker, maybe 1 more sweet potato would be nice. I loved how all the flavors in this soup; I even had a second bowl. I would bet that this soup is pretty healthy too, no cream in it, just veggies and water basically. I would highly recommend this one for dinner tonight!

Notes: I followed the directions on this on, like I said maybe add another potato. Other then that, it was perfect!

    Where’s the fresh ginger. It’s so inexpensive and there is no comparison to dry.

      I don’t know much about working with fresh ginger, I’ve just always used dried. Maybe next time I need some I’ll read up on it and give it a try if I can find it in the store.
