Rachael Ray: Chopped Chicken Salad
This is a great lighter Rachael Ray recipe. Really the salad and ingredients are nothing new, but all together with a little lime juice it is delicious! This is a perfect summer meal! We loved it at our house so I really think you’ll like it at yours!

Notes: I roasted some chicken breast in the oven instead of buying a chicken already cooked, I had some frozen ones so why not just use those. The husband added some balsamic vinegar dressing to his salad, he likes his salad drenched in dressing, when the lime juice was just enough for me. Like I said light and delicious!
