Rachael Ray: Chicken Club Salad

I really loved this Rachael Ray salad. We like a good salad at our house, we don’t mind trying different dressings or combinations. A little bit of this salad goes a long way, and I’m sure its pretty good for you. I love how the dressing is creamy from the avocado, but not to high in fat since there is no mayo. I know, avocados have a lot of fat in them, but its the good kind! If you served this up with some bread, it would taste exactly like a good chicken club sandwich!

Notes:Well as you can see by the pictures, I mixed the dressing in my blender, I don’t use it much, and I didn’t want it to feel left out! It does just as good as the food processor and in my opinion it is easier to clean up. I used green leaf lettuce instead of romaine, only because it looked better at the store, and I only needed the juice from 1 lemon. The last difference is I just used microwave bacon, the thicker bacon would’ve been great in the salad, but since the husband doesn’t really care for bacon, why waste my money?
