Rachael Ray: Green Quesadillas with Brie
Since the little one loves cheese I thought this Rachael Ray recipe would be good for him. For a long time I only liked yellow cheese, or thought I only liked yellow cheese. I lived in Europe for 3 months, and they only have white cheese. I was so excited to find yellow cheese one time and I paid a fortune for it. Money well spent. I want to introduce the little one to different kinds of flavors so he won’t be so picky. As for now, he’s never met a cheese he didn’t like!

Notes:I used my panini grill to make these quesadillas. I’m not good at working with Brie cheese at all. I should probably research it some more to find the best way to cut it. I like brie cheese okay, but I find when you melt it down it is a little greasy. The little one loved these. I could not find Brie with herbs, so I just used plain Brie. If I would’ve thought about it, I would have bought some cilantro and added that in.

- place Brie on tortilla
- add tarragon
- add chives
- fold and grill
- remove after cheese is melted
