Rachael Ray: Bacon, Lettuce, Avocado, and Tomato Tantine
This Rachael Ray recipe is the perfect lunch when you need something quick and you’re tired of regular sandwiches. I love all of these flavors, and I ate this for a quick lunch while I’m trying to organize and pack our things so we can move. So things are crazy right now. There isn’t a lot of ingredients you need and as always, I speed things up a bit! So enjoy this filling easy lunch; you’ll feel like you’re at a cafe.

Notes:I cooked my bacon in the microwave, zap 2 pieces for 1 minute and let crisp up. I almost pulled out the trusty toaster to toast the bread, but I threw it in the oven for a few and then flipped it. I just used some lemon juice from the bottle and garlic salt to mash the avocado. (The lemon got left out of the ingredients pic.) I cut 1 roma tomato and used that. All in all cut and mash while you’re toasting up the bread and cooking the bacon in the mic, and you’ll be ready to assemble in no time!
