Rachael Ray: PB&J Extreme

Don’t judge this Rachael Ray recipe by the ingredient list. I told my mom I was making this recipe tonight, and she thought I was crazy. She said, “bacon?” Well, we didn’t eat this for dinner, because we had 2 showings, so time was short, and my mom was so nice to cook dinner for the baby and I while we stayed there for a few hours. This was a great snack for my high intense workout I did later. So that’s why there is only 1 piece of bread, I did a half a sandwich. I am not going to lie, I was scared to try it, but honestly I loved it! So go out on a limb, and give this PB&J a try!

Total Time: 5 minutes

Notes: I did not use the turkey bacon I bought, because I was tired and I still had some handy fully cooked microwavable bacon, so I used that instead. I realize this is not as healthy, but I just need 1 piece of bacon, and I was not going to break out the skillet for that. But I’m sure the turkey bacon would be great.

Rachael Ray: Farmer’s Bagel Baskets

Everything about this Rachael Ray recipe I loved; with the exception of the eggs of course. It reminded me of a breakfast hash. If you want to eliminate some of these steps you could buy those potatoes with peppers already in them, the frozen ones you know? I made it all from fresh ingredients. The baby loved this, he almost ate the entire thing. I decided if he was going to dip chips in Chili’s salsa and eat them at lunch, he could take the heat. He’s a boy after my own heart! I am also pretty sure I didn’t cut these right, but the bagels were already pre-cut, so you gotta work with what you’ve got!

Total Time: 23 minutes (1 Little Einstein episode, so perfect!)

Notes: I decided to season this up with some steak seasoning, which was fabulous. I also scrambled 1 egg for the baby and put it in his, he likes eggs, because I’ve always made them for him, so he doesn’t know any different. I am a firm believe if I introduce him to all the good foods I don’t like now, there is a better chance of him liking them!  I will say, because I am “semi” watching my diet, I didn’t eat mine in a bagel, just without a bagel so I wouldn’t have the extra carbs, I got plenty at lunch!
