Rachael Ray: Apple Jack Quesadillas

Rachael Ray has a few recipes with apples and cheese, I’ve never tried one until today. I thought, people eat apples and cheese together all the time, so it can’t be too bad. It was wonderful, nice, lite, and delicious! I think this is a great way to get your kids to eat apples, the baby liked them! Heating the apples up releases their sugars, so it gives it a little sweeter flavor. I really enjoyed these today for lunch, they were perfect!

Notes:I used flour tortillas, not wheat because I had some I needed to use up, and I didn’t buy wheat ones at the store. I also used Monterrey Jack Cheese and some red apple, I honestly have no idea what kind it was. I also couldn’t find pepper jelly at the store and choose not to use any jelly on these. I thought about it, but decided against it. Like I said, they were still yummy! I grilled these up on my panini machine and didn’t use any oil. If you don’t have one of those, you really should invest in one!

Rachael Ray: Italian Style Chicken Noodle Soup

It would be my luck that I choose to have a Rachael Ray soup recipe on a super hot day. I made it anyway, because I was pretty excited to try it out. I’m not a huge fan of chicken noodle soup. I guess, I just thought this would be a healthy eating option, and it would be pretty quick. This recipe is part of Chicken Noodle soup 3 ways, so when I was making my grocery list, I left off carrots and celery. I was okay without the celery; I wish I had some carrots. You might want to get some carrots before you make this one. Overall, I felt like the flavors were all pretty good, and it reminded me of a Italian soup you might get at Olive Garden, almost like a good Pasta Fagioli without the meat!

Total Time: 35 minutes

Notes: If you let this simmer for a while, with the pasta in it, you might want to add some more broth. I made this mistake, so I didn’t have much broth, which I was personally okay with. The baby didn’t try this one, he was hungry right when we got home, he couldn’t wait. I mixed this all up, brought it to a boil and then added the pasta. Left it on for about 2-3 minutes, then turned the heat off. When I opened the pot to take some out to eat after my workout, it was pretty thick, just the way I like it! Oh I did add some Italian seasoning to mine and I cooked the chicken most of the way while boiling it in a separate pot.
