Rachael Ray: Maple Ham with Spicy Creamed Spinach

The main reason I picked this Rachael Ray recipe is for the spinach. I like spinach in salad, but cooked spinach is not my favorite. The Husband loves spinach, so this was for him. The great thing about this meal is it comes together so fast. The crazy thing is I started making this when I got the call that my cousin had her baby, so about 30 minutes later we had all eaten, very quickly and were out the door. So if you don’t have a lot of time to cook or eat, this one is perfect for you!

Husband Says: “The ham was good, and I really liked the spinach. A little spicy, it was nice.”

Notes: I didn’t change anything on this, maybe would’ve made 2 ham steaks and had more spinach. I don’t usually cook it down, and I knew it would cook down some, but that spinach cooked down a lot. So I’d get 2-3 times more spinach then you think you need!

Rachael Ray: Salsa Stoup and Double Decker Quesadillas

My husband was not excited about this Rachael Ray recipe, honestly neither was I. Who knew it would be  95 degrees today? A salsa stoup was the last thing we wanted to eat. I should have served it cold, which I just thought about, oh 3 hours too late. However, I’m so proud of him for giving it a try, because it wasn’t bad! I did change up the quesadilla a bit, but everyone ate theirs, including the baby! The quesadilla is a great dipper in the soup!

Husband Says: I forgot to ask him….so I’ll have to update this later, I think he enjoyed the quesadilla because he ate 2….

Notes: If I were to make this stoup (a soup but slightly thicker, it’s a Rachael word!) again, I think I would leave out the celery. It just didn’t seem to fit, maybe I didn’t saute it enough, but I didn’t like it in the stoup. Other then that I thought the stoup was delicious. For my Double Decker Quesadillas, I changed it up a lot. Instead of putting a layer of Pepperjack cheese, I used refried beans. I also brushed them with butter, not vegetable oil. I loved these Quesadillas, and we got a little bit of protein, so I think it was a nice balance! I did not make the avacado mash in the linked recipe, it isn’t in the book!
