<p><strong>Husband Says: </strong>&#8220;It wasn&#8217;t bad, maybe could&#8217;ve used some more sauce, or the honey, could&#8217;ve been a little sweeter.&#8221;</p>
<p><strong>Notes:</strong> I thought about grilling these because it was nice, but my grill wouldn&#8217;t turn on. All my skillets were dirty so I stuck these in the oven for 20 minutes at 450. They turned out great. Since I do have a child under 1, I made this sans the honey, which I think would&#8217;ve added a lot of great flavor, so if you make it with honey let me know what you think! Also I used metal skewers over wood ones, you don&#8217;t have to keep buying those!</p>

The recipe out of the book is different then the one that is linked here, so if you bought the groceries for this week, substitute, whole tomatoes and crushed tomatoes for the cherry tomatoes. It'll be the same. Also, if you couldn't find it, don't use your money on the ricotta salata, I had to get it from the Gourmet Store, and it was a little expensive, the linked recipe suggest substituting 1 cup of whole milk ricotta cheese, go for that, or crumble up some other kind of cheese.

<p><strong>Notes:</strong>In the book it says to fry the eggplant, I started doing that, then decided to forget it and roast it in the oven. I should&#8217;ve diced my eggplant up, instead of sliced it. I just put the slices on top of the pasta, because the eggplant was falling apart. Also I didn&#8217;t chop and seed the whole tomatoes, I just boiled them; then mashed them up with a potato masher.</p>

<p><strong>Husband Says:</strong> &#8221; These are really good, I added mustard and mayo to mine because that&#8217;s how I like it. I ate 2, I liked them.&#8221; (Obviously he ate after me, left before I got home, but he was nice enough to call and give his opinion.)</p>
<p><strong>Notes:</strong> I left out the onions, why you might ask, well I was lazy tonight and my husband was getting tired of having onions in every meal. I also changed my mind last minute and used some mozzarella cheese instead of provolone, but I&#8217;m sure it&#8217;s good either way.</p>

<p><strong>Notes:</strong> If you don&#8217;t want to use wine in your cooking, don&#8217;t, I like to use it because the flavors are usually so good. I&#8217;m not sure I would&#8217;ve missed it in this dish, and don&#8217;t worry about your little ones, the alcohol cooks out, so it is mostly just very intense flavors. Also, maybe tone back the rosemary a little bit, and I would just leave out the sauce, or don&#8217;t make it thick like I did. I served this with some white cheddar mac and cheese.</p>

<p><strong>Husband Says: </strong>&#8220;It tasted like French toast, nothing reall profound, it was toast.&#8221; (Wow, now I feel stupid for raving about it&#8230;.I promise this stuff is good.)</p>
<p><strong>Notes:</strong> There is really nothing, absolutely nothing I did different in this recipe, except put a strawberry on top for the picture!</p>

<p><strong>Husband Says:</strong> &#8220;Too much steak sauce, it tasted like a fajita to me, it was good, wasn&#8217;t anything out of the ordinary.&#8221;</p>
<p><strong>Notes:</strong>I don&#8217;t think I put steak sauce on your grocery list, and if you have it don&#8217;t use it, and if you don&#8217;t have it you&#8217;re not missing anything. I really agree with everything that the Husband said about this burrito. I used just cheddar cheese, and like I said in the opening, it was good, but if you&#8217;re expecting a Philly taste, you&#8217;re not going to get it here. Also I pretty much cooked the steak and onions and peppers in the same pan. You know me, the less to clean up, the better!</p>

<p><strong>Husband Says: </strong>&#8220;I liked the flavor, the strawberries gave the meat a sweet taste, but it wasn&#8217;t my favorite.&#8221;</p>
<p><strong>Notes:</strong> The store was out of basil, and when I went to another store to get a few other items, I forgot I needed basil, therefore,  I did not use it. Let me assure you, basil and strawberries together are amazing! Also if you&#8217;re worried about using Balsamic Vinegar, don&#8217;t be, you&#8217;ll love the flavor that it brings out. I learned a lot about Balsamic Vinegar when we took a trip to Italy, they use it for everything over there, it is a great ingredient! Also, I didn&#8217;t do the tent thing while cooking, that seemed unnecessary to me, plus I was out of foil! I didn&#8217;t use figs in this one either.</p>
