Chicken Recipe

This last recipe for the week out of Rachael Ray’s Open House cookbook is very kid friendly. If your kids are older she gives suggestions on things that they can do to help. I highly recommend having your kids help you, helping them realize what all goes into cooking with eventually make a good impact on them. This was a very simple recipe, I ate it with some oven fries, but it would be great with just about any veggie.

Husband Says: “It wasn’t bad, maybe could’ve used some more sauce, or the honey, could’ve been a little sweeter.”

Notes: I thought about grilling these because it was nice, but my grill wouldn’t turn on. All my skillets were dirty so I stuck these in the oven for 20 minutes at 450. They turned out great. Since I do have a child under 1, I made this sans the honey, which I think would’ve added a lot of great flavor, so if you make it with honey let me know what you think! Also I used metal skewers over wood ones, you don’t have to keep buying those!

Eggplant Pasta Recipe

Rachael Ray’s Pasta all Norma is okay, it wasn’t the best pasta I’ve ever had, however I did try eggplant and I liked it. So if nothing else, if you are like me and were a little weary of trying eggplant, go on a limb, if you like squash, you’ll like it! The recipe out of the book is different then the one that is linked here, so if you bought the groceries for this week, substitute, whole tomatoes and crushed tomatoes for the cherry tomatoes. It’ll be the same. Also, if you couldn’t find it, don’t use your money on the ricotta salata, I had to get it from the Gourmet Store, and it was a little expensive, the linked recipe suggest substituting 1 cup of whole milk ricotta cheese, go for that, or crumble up some other kind of cheese.

Husband Says: “It was decent, don’t like the cheese. Just like regular pasta.”

Notes:In the book it says to fry the eggplant, I started doing that, then decided to forget it and roast it in the oven. I should’ve diced my eggplant up, instead of sliced it. I just put the slices on top of the pasta, because the eggplant was falling apart. Also I didn’t chop and seed the whole tomatoes, I just boiled them; then mashed them up with a potato masher.
