Rachael Ray: Cranberry and Soy Glazed Ribs

This Rachael Ray recipe caught my eye in her December Magazine Index. It was listed as a web recipe. The husband bought some ribs from some students and they’ve been in our freezer for a while. It is perfect timing since I’m going to be leaving our fridge with our house, it’s time to clean it all out. I made another cranberry ribs recipe in October, so he wasn’t thrilled they were going to be close to the same. To my surprise when I opened the ribs, they were already cooked. So I ended up heating them up, then putting the glaze on some ribs, but not all of them. Everyone was happy!

Notes: Like I said, this was just used as a glaze on our ribs. I served this up with some potato salad and baked beans, it was good!

Rachael Ray: Caramel Apple Layer Cake

Happy Thanksgiving! I’m sure you’re not even interested in making this Rachael Ray recipe today, but it is a good dessert. While you are probably having your fill of pumpkin and pecan pies, here is a great Fall cake recipe. I like apple pie, mostly when it is cool outside with a huge scoop of ice cream on top. Starbucks makes an apple cider that taste like an apple pie exploded in your mouth. I felt the same reaction with this cake. It is so full of apple pie with a nice hint of caramel, you’re going to want another piece!

Total Time:40 minutes baking, 1 hour cooling

Notes: Make sure you cool these long enough before you start icing. I always make that mistake. I think they smelled so good I just couldn’t wait to take a bite. I also had a little problem getting my cakes out of the pans, both of them didn’t come out perfect. I’m sure it would’ve looked better had I waited to ice it. But it was still so good!
