Rachael Ray: Eggplant Caviar

Well we are over 6 months in to cooking Rachael Ray, and tonight, I threw this whole thing out. I didn’t think it was possible, and maybe I made this all wrong, but I was not a fan of this eggplant caviar. I’m newly a fan of eggplant, but this just wasn’t good. So if you make this, let me know if I’m crazy, I did something wrong, or what you’re really thinking is you’re crazy for making this in the first place. So I’m sad to say, I wouldn’t recommend this one!

Rachael Ray: Italian Style Mac and Cheese

Here is my latest go at a Rachael Ray Mac and Cheese. I will say I think this might win the prize for my favorite non spicy mac and cheese. I really liked all of the flavors here, I liked using the Italian 4 cheese over the cheddar. It was all just so wonderful. I love that there are tomatoes in this recipe, it just makes it that much tastier! The baby liked it, he ate a whole little bowl full of it, he’s never going to want mac and cheese from the box, oh well, this is actually much better for you. Well, as good as mac and cheese can get for you. I know I could do things like leave out heavy cream and use wheat pasta to make it healthier, but we’re not going for the healthiest mac and cheese, just the best!

Husband Says: “It was pretty good. Like a hamburger helper type dish.”

Notes: I did not use mushrooms in this one, I just don’t like them. I guess I could pick them out, but I thought it was just fine without them. I also can not find sweet sausage at the store, so I just used plain sausage. I thought it tasted just fine. I would say I think this mac and cheese is “Italian” just because you blend Italian cheese in it, you won’t find something like this in Italy!
