Rachael Ray: Swiss and Bacon Dip

This Rachael Ray dip isn’t bad! I’m not so sure about eating it with carrots, the bread was better, or chips would even be better then that. I think that you could put this out at your next appetizer or finger food party and people would really enjoy it. Sorry I don’t have more of a story for this one. I choose it because it would be easy and wouldn’t take a lot of time to make or clean up!

Notes: I cut up pieces of sliced Swiss cheese, they don’t sell it by the block or shredded at my store. Other then that I just mixed everything together and threw it in the oven.

Rachael Ray: Velvet Asparagus Soup

This Rachael Ray recipe has caught my eye several times. I was so worried to try it. Last year the husband and I visited Puerto Vallarta, at the steak restaurant there we had cream of asparagus soup. I don’t like asparagus, I know it is good for you, and it is something that I should eat, but I just can’t do it. Well, I was cooking this up and my husband looked in the pan and said, is that asparagus? I said yes, I’m making soup, and you’re going to try it! Well I loved this soup, it was so delicious. If you like cream of broccoli soup, you’ll like this one. So I encourage you to give this soup a try, I think you’ll be in for a surprise!

Husband Says: “It was pretty good. Creamy. Better then I thought it would be since I’m not a big asparagus fan.”

Notes: I did everything as the recipe says, but I didn’t make anything look too pretty. I didn’t save the tips from the asparagus to put as a garnish. I really wanted to forget what I was eating. Everything else I did as Rachael says, again, it was delicious! Give it a try! I also did not use white wine, just plain old water.
