Total Time:5 minutes, I’d let refrigerate for at least 30 minutes after making

Notes: I didn’t do anything different. I was tempted to use a different fruit over the raspberries, but really they were a nice contrast to the lemon pudding! Oh, I guess I did just make 1 box of pudding, didn’t need 2!

This Rachael Ray recipe has caught my eye several times. I was so worried to try it. Last year the husband and I visited Puerto Vallarta, at the steak restaurant there we had cream of asparagus soup. I don't like asparagus, I know it is good for you, and it is something that I should eat, but I just can't do it. Well, I was cooking this up and my husband looked in the pan and said, is that asparagus? I said yes, I'm making soup, and you're going to try it! Well I loved this soup, it was so delicious. If you like cream of broccoli soup, you'll like this one. So I encourage you to give this soup a try, I think you'll be in for a surprise!

Notes: I did everything as the recipe says, but I didn’t make anything look too pretty. I didn’t save the tips from the asparagus to put as a garnish. I really wanted to forget what I was eating. Everything else I did as Rachael says, again, it was delicious! Give it a try! I also did not use white wine, just plain old water.

Here is my latest go at a Rachael Ray Mac and Cheese. I will say I think this might win the prize for my favorite non spicy mac and cheese. I really liked all of the flavors here, I liked using the Italian 4 cheese over the cheddar. It was all just so wonderful. I love that there are tomatoes in this recipe, it just makes it that much tastier! The baby liked it, he ate a whole little bowl full of it, he's never going to want mac and cheese from the box, oh well, this is actually much better for you. Well, as good as mac and cheese can get for you. I know I could do things like leave out heavy cream and use wheat pasta to make it healthier, but we're not going for the healthiest mac and cheese, just the best!

Cookbook: Get Together

Total Time: 35 minutes

Husband Says: “It was pretty good. Like a hamburger helper type dish.”

Notes: I did not use mushrooms in this one, I just don’t like them. I guess I could pick them out, but I thought it was just fine without them. I also can not find sweet sausage at the store, so I just used plain sausage. I thought it tasted just fine. I would say I think this mac and cheese is “Italian” just because you blend Italian cheese in it, you won’t find something like this in Italy!

So if you want a freshly cooked bird in less time, make a cornish hen!

Recipe: Cornish Hens- slather EVOO, rosemary, thyme, salt and pepper and roast in oven at 500 degrees for 15 minutes and 10 more minutes at 400 degrees

Cornish Hens

Cookbook:Get Togethers

Total Time: 50 minutes

Husband Says: “Taste like chicken. I’ve had them before. ”

Notes: I didn’t have any rosemary, they didn’t have it at the store, so I used parsley. I also had to roast mine longer then the 15 minutes and 10 minutes Rachael suggest. I cut into 1 after the amount of time and it was still pretty raw. These you want to make sure you cook all the way through, so just put a little water in the pan so they don’t dry out!

You need to make this Rachael Ray salad, tonight, seriously, you'll be sorry if you don't. I had an old friend over for dinner, she took one bite of this salad and fell in love. I fell in love as well, it really was very tasty. I enjoyed it so much. The flavor is so different, and refreshing. You could easily serve this salad for lunch or as a side dish. I think it would be perfect with some grilled chicken. However you want to serve it, make it tonight! It is funny to me how much I don't like cooked spinach, but I would eat a spinach salad over other lettuce any day! You get so many healthy benefits from eating spinach! I did let the baby try it, and he ate 2 pieces of lettuce, so your kids might even like it as well!

Husband Says: “It was good, had lots of flavor. Tangy.”

Notes: I forgot to buy a shallot at the store, so I used a pearl onion I had. I know they have different flavor but sometimes you gotta use what you’ve got. I also just poured the soy sauce, mustard, and red wine vinegar in the skillet with the onion and EVOO, then streamed more EVOO in. You know me, the less dishes I have to do the happier woman I am!

Well I finally scheduled a Rachael Ray recipe that included pineapple before my pineapple went bad! I can’t tell you how excited I am about this because I love fresh pineapple, and it was oh so good. The rest was okay, nothing to special. It probably would’ve helped if I had teriyaki sauce, I thought I did, and I wasn’t about to run to the store to get it. So see the notes below to see how I improvised this one.

Recipe:Chicken Teriyaki, Rice Balls, and Pineapple Spears

Chicken Teriyaki, rice balls, and pineapple

Cookbook:Get Togethers

Total Time: 30 minutes

Husband Says: “It was okay, the chicken was burned.”

Notes: The worst thing about sauces with chicken is the blackening effect that happens. When the sauce burns, not the chicken. That is my defense for this one. So instead of teryaki sauce I used some soy sauce, it was good, but I might should’ve gone with my second choice of sweet and sour sauce that I had. I also couldn’t find black sesame seeds, so I substituted regular sesame seeds, I did not toast them. I also did not soak the pineapple in water, I just love it fresh! I also only used Chicken thighs, there are just 3 of us!

Well, I had to look up what Rachael Ray meant by "chimichuri"; but all in all it doesn't matter because this chicken is good! I really loved the little hint of spice, but all of the flavors of it were fresh and different. I love different tasting chicken, I could eat chicken for every meal, but the husband likes some variety, so hopefully this chicken is different enough for him. Try it for lunch or dinner today or use it at your next finger food party!

Cookbook:Get Togethers

Total Time: 20 minutes

Husband Says:

Notes: I just left the chicken in strips since we were eating it for lunch. I didn’t feel like my sauce was the right consistency to dip this in, so maybe I didn’t pulse it enough. I used dry oregano and thyme, because my store doesn’t have those fresh. Like I said I really enjoyed the flavors, I also just used 1 jalapeno so it wouldn’t be so hot for the baby.
