Rachael Ray: Lemon Mousse

I love desserts, so this Rachael Ray dessert recipe  made because it wasn’t chocolate. I’m a believer that all desserts should have chocolate in them. I love it, I wish I didn’t love it so much. You can’t help what you love right? I thought this was a refreshing dessert, very light, but sweet, and the flavor was so good. I licked the bowl, don’t tell!

Total Time:5 minutes, I’d let refrigerate for at least 30 minutes after making

Notes: I didn’t do anything different. I was tempted to use a different fruit over the raspberries, but really they were a nice contrast to the lemon pudding! Oh, I guess I did just make 1 box of pudding, didn’t need 2!

Rachael Ray: Mexican Caramel Sundae

I thought this Rachael Ray ice cream dessert would be fun. It’s not too special, I guess you spice up the caramel sauce. It is good stuff though. My ice cream started to melt before I could even get a picture of it. This would be a fun dessert after a Mexican fiesta!

Notes: Since I was making this for myself I heated the caramel syrup up in the microwave. It just made more since. I also didn’t have any sugar so I used brown sugar. But the tortilla was good!
